Conclusion
Kind of a funny story. The first beta release did NOT have any kind of uninstallation file with it, so once it was installed, you were stuck with it. That's why I installed that one on a Virtual PC. This time around, I wanted to see if it had a way to uninstall it or not. I was going through the installation steps on my main PC and looking for anything that said "uninstallation included". I thought I'd get to the page that says, "Click Next to install", but before I knew it, it was already installing on my main PC! To avoid messing things up, I had to let it finish and then I rebooted. Behold, IE7beta2 on my main PC with NO uninstallation...great...
